What do nature conservation, bartending, and sober curiosity have in common? The answer is Paul Matthew—the owner of The Hide and founder of Everleaf, a range of non-alcoholic aperitifs made from carefully sourced botanicals. Starting as a keen conservation biologist, Matthew had to supplement his scanty income as a biologist by doing cocktail and mixology gigs in bars worldwide, where he picked up a few mixing tricks and combined them with his mastery of plants and botanicals, passed down to him by his father and supplemented by his inquisitive nature. In January 2019, he introduced Everleaf’s Forest—an original cordial made with saffron, vanilla, gentian root, iris, and voodoo lily. This refreshing drink is best enjoyed splashed with tonic water with a thin slice of blood orange for embellishment. A perfect serve includes one part Forest aperitif, three parts light tonic, and crescent ice with a thinly-sliced orange circle.
