About Hiro Junmai Sake Blue
Hiro Sake is crafted in the Niigata prefecture of Japan, a region famous for its sake production. Produced among golden rice fields, near the Murakami river, this sake bridges the gap between tradition and modernity. The Taiyo Shuzo Brewery took inspiration from the ancient recipe of Hiroemon Takeda, a renowned samurai and sake connoisseur. Hiro Junmai Sake Blue is made with specially polished rice from the Murakami plain in the Niigata region. After polishing, the rice is soaked. Koji fungus is added first, while sake yeast (shubo) helps with the second stage of fermentation. The sake is filtered and pasteurized twice before being bottled at 30 proof. Look for notes of vanilla, maple, pear, fruit, white mushroom, cherry, and subtle spice.
